From your description, the 2 16 ohm speakers are wired in parallel, so the cabinet itself is an 8 ohm cabinet. The 2 jacks are in parallel, so you can connect either jack to your amp's 8 ohm output. My advice though is to try different brands and see what suits you best. That's probably the best advice you're going to get on the subject. Strings can be a personal preference thing. Myself, I'm still experimenting. I haen't found some that I absolutely hate yet (though Squire Bullets come close)...

You are going into the "guitar" input of your amp?

Looks like you are on your way.

If it was me doing it, I wouldn't have glued the shim. I would have let the neck screws clamp it in place.

At least until I have everything perfectly set up, and had lived with it for a while.

It won't break anything, if that's what you are worried about. It might sound a bit odd until you get the settings dialed in, but it won't cause any smoke to escape from anything. My 11 year old son has been playing for 3 years, and he doesn't seem to have issues with hand size.

He does practice quite a bit, though (4-5 days a week, 30 min per day). Certainly a lot more time than I put in.
