Which way the magnets usually go, N-S-N or S-N-S I can't tell. But the middle pickup should be both magnetically reversed and reverse wound compared to the outside two. Then any combination of the middle pickup with one of the outer ones is humbucking.

I'll suggest that wide open all the time isn't necessarily best. I'd say do it like the old bluesmen do: Turn everything up on the guitar, and set the volume, gain and treble on your amp as high as you'd possibly want to go at a given session or just a little more. Then turn down your guitar's volum...

Cat bites are always very likely to get infected. Cats usually carry Pasteurella multocida in their mouths. Bad stuff to get injected into your tissues. If you DID have a single pickup and a three way switch, there are several useful things you could do with it, like splitting a humbucker's coils and switching between parallel and series connections, or changing out different tone caps or cutting it out altogether.

It's a very basic, cheap guitar, but fundamentally sound. One was the first guitar in our household, and we still have it. One position on the pickup switch quit working and had to be resoldered. No other problems. I wouldn't spend money on "upgrades," just what it might take to keep it working.

It's normal. There are Strat pickups with staggered poles, and flush ones.

I've not messed with a Jet City amp. But the highest praise for them that I've seen and heard has been from young rockers, more so than old blues-rock oriented guys, so I'm suspicious that playing in that edge of crunch regime I like so well may not be their forte. Roy, those GFS P-90s are likely quite similar to the ceramic magnet P-90s on my Agile AS-820 semihollow and the AL-2500 LP clone with THREE of 'em that I got for my son. I love how those things sound!
