All strings vibrate at a higher pitch when they're vibrating through a wider range. As the string is swinging out farther to each side on its oscillations, it's being stretched just as it is when you "bend" a note. It's especially obvious when you use light gauge strings and pick hard that a note will be sharp right after the attack and go flatter as it dies out. It happens with all strings to a greater or lesser extent, though.
