actually a saddle is most commonly found on a horse. :lol:
ok so I guess you mean the saddles on the bridge of your guitar. I'm not exactly sure what your describing by in or out, however all the saddles that iv'e seen could be adjusted in two ways. the two allen screws on the top of the saddle on either side of the string adjust the height. and the screw going throught the bridge into the back of the saddle is used to adjust the string length.

Oddly enough afterblast that's how I used to remember the difference long ago, the Saddle goes on the horse which goes on the Bridge.
On an acoustic, yes the saddle will come out. On some older guitars like Martin the saddle cuts all the way through the bridge from side to side and is sometimes held in by a drop of glue.
They're commonly not symmetrical. Try to remember which way it goes, in case it falls out when you have all the strings off. Otherwise you've got a 50/50 chance of getting it right.
