I have been having trouble finding information to if specific scales go with specific styles of play or specific songs. for example, can I play g melodic minor with any song in the key of g minor, or does it need a certain chord progression to play this scale?

In theory, yes, but don't forget that on a rising melodic line you'll need a chord of C, not Cm, or it will sound awful, and don't play a descending melodic line using F natural over the dominant D7 for the same reason - you'll need to change your chord - and the III chord may well need to be an augmented chord.
