So I am writing my little pieceand I find myself using an F# to B interval harmonically, so how do I write the F# ? if I put a # symbol on it it will be sharp both F and B no ?
So do I put a natural sign next to the B O_O?

No. Sharps and flats in standard notation affect only the line they're on (within a measure). You put a sharp in front of the F, and it sharps ONLY the F notes on the same line (or space). If you have another F later on a different line or space, most publishers include a "courtesy accidental" to show it as a natural - but that's not actually needed.

eg in key of F are all Bs normally flattened (flatted ?) or only those noted in the staff.
(ie not those in the ledger lines). I had assumed all would be affected unless noted otherwise.

Yes, you're right. The sharps or flats of the key signature affect the notes at ALL octaves.
