I was watching the musical tribute to Paul Simon that was done at the Montreal Jazz festival on TV last night, and I saw this one guitar. I've never had my breath taken away by the appearance of one until now (it sounded really good too :D). I've been looking for it on the internet, but I can't find it as I didn't see the manufacturer's name.
It had a very thin body, probably less than an inch. Two P-90 pickups, shaped like a telecaster only with the 'horn' much shorter and bent at almost a 90 degree angle. There was a Bigsby type tremolo on it, and it had a rectangular headstock. There was binding on both the top and bottom of the body (I think), and it had a red and black sunburst.
Any ideas?

Parker Fly?
I actually thought of Parker guitars when I was writing my post, but I checked their site and nothing looked like it. By rectangular headstock, I mean Gibson-style. The lower horn, while at a similar angle to the Fly is much shorter. The top and back were flat, best as I could tell. No countouring, but it was very thin.
EDIT: The body looked a little like one of these, but again, with binding, p90s and a Bigsby-style tremolo.

Nope, nothing like that I'm afraid. Checked out the Yamaha website after seeing your post, it's safe to say it's not one of theirs. There was no countouring at all of the body, and there was binding on the top and back. I've browsed through Musician's friend and haven't found anything on Google Pictures either while looking for guitars with p-90s or Bigsby tremolos.

im gonna guess at a gretsch of some sort

The one I saw was with a sunburst, no pickguard and less controls though.
EDIT: Make it this one that's closest. The bridge is definately the right type, but I'm pretty sure there wasn't a pickguard, and the pickups were cream soapbar P90 style.

You can always remove pickguards and replace pickups.

I'm trying to find a picture of it, but I have a hunch of what you saw. I saw Al Schnier from moe. play this guitar and I'm trying my best to get a picture. Here's my guess:
PRS Custom Shop McCarty Soapbox with Bigsby. I'll post a pic as soon as I find one, and anyone else is free to if they can find it.

dl0571: Still not it, I'm afraid. I should probably make a list of all the manufacturers I've checked already :D I've checked... Parker, PRS, Epiphone, Ibanez, Reverend, Hamer, G&L, Gretsch, Gibson (and their subsidiaries) & Fender. And possibly some I'm forgetting...
According to Paul Simon's website, the guitarist was most likely a member of Daniel Thouin's band, but I can't find any info on them.
You can always remove pickguards and replace pickups.
True, but if there wasn't a pickguard then the p90s were mounted in holes the exact size for them.
I'm starting to think it must have been a custom made one.
