I have an SSS config. fender strat and i just changed the bridge pickup with a Humbucker, I was wondering it i could change the middle pickup with a humbucker too so I can get no hum at all (i play with 2 pickups at a time, 5 way selector)

You could replace all 3 with humbuckers if you wanted to.
There's no rule says you can't.
