I recently bought a schecter 7 string, from the Atx series. The Only issue it has is one or the tuning knobs is snapped clean off. Part of the screw is still in the peg. I have never done a repair of Any kind before. If I bought a new peg set could I Just repair the single knob without causing any issues?

Sure, why not? I don't know how difficult it is to replace a tuner knob, but at worse you should be able to get a replacement tuner. Replace the old one and it will be good as new. The only issue would be you might have to buy a set of tuners if you can't find just one. If that were the case, get upgraded tuners and replace them all. More $$$ but an easy repair.
