Hollowbody Pickup Advice/Suggestions Needed

I just got a new Ibanez Artcore AF85TDG (pics below) and I want to use it for jazz and rockabilly mostly... I want the neck pickup, which I haven't decided on, to be a sweet, thick, very warm jazz tone and the bridge a hot rodin', Setzer style rockabilly tone... I am new to the type pickups installed on this guitar from the factory (PAFs I believe? No idea what that means) but I like the way they look and have been told they are only covers and I can install any humbucker I want under them and keep the covers on without diminishing the pickups. Is this true? I was thinking about a TV Jones TV Classic at the bridge but I don't think it won't fit under the cover and I know they come in gold but I still want to use the covers... for now anyway... I was told the Gibson 57 Classic Plus might be a way to go but really can't find any audio/video to support that advice... there are some clips below of a few pickups I am considering but what are the best PUs for these two tones that either come with the cover as the Gibson 57 Classic does or that can fit under my covers? Any thoughts or suggestions? Thanks!

You may want to play the stock pickups a while, then make a decision on changing them. Those ACH pups have a pretty sweet tone themselves

Oh I plan to believe me but I'm pretty sure there will be an upgrade before long.
