Frying is the only decent way to cook okra. Wonderful stuff!

Boiled, it's like great slimy green slugs.

However, there's no proper gumbo that doesn't contain okra, "gumbo" being a West African word for okra.

You can make a really tasty curry out of okra...just use the standard Indian curry recipe:
Heat oil in a saucepan. Add 1 tspn of mustard seeds and 1 tspn of cumin. Fry for 30sec. Add 1/2 to 1 chopped onion and a couple of cloves of chopped garlic and fry till onion softens. Put your chopped okra (or whatever vegetables you are going to cook) in, add 1 tspn of tumeric, 1 tspn of masala and salt to taste. Cook for a while. When it's nearly cooked throw in some tinned tomatoes. It's cooked when the okra is nice and soft and it tastes good. The sliminess of the okra goes away during the cooking process.
