My dad would always talk about retirement, and allude to the pot of gold at the end of the rainbow. And I say all you've got at the end of the rainbow is death. You're riding the rainbow right now. - Mark Borchardt
I would suggest 5 that give you different stylistic approaches. For example:
Honky Tonk Women for that bluesy country rock style
Evil Ways to give you a latin jazz/rock feel
Your Cheatin Heart for that old school country vibe
Commit a Crime for straight up dirty blues
Jumpin Jack Flash for straight up R&R
Immature? Of course I'm immature Einstein, I'm 50 and in a Rock and ROll band.

Tastes are certainly different, each to their own, but I'll add "Over the Rainbow" to the list...
I may grow old, but I'll never grow up.
"Blackbird" The Beatles, great fingerpicker that is somewhat easy!
"House of the Rising Sun" traditional, arppegios!
"Take It Easy" Jackson Browne, strumming!
"Mannish Boy" Muddy Waters, Blues basics!
And of course, "Smoke on the Water" Deep Purple, Just for mindless fun! Yay, power chords forever!
Just my take, I think it covers a lot of basic styles, good for beginners to know.
When I die, I want to go peacefully in my sleep like my grandfather, not screaming......
like the passengers in his car.
Blackbird is the first one I seen that has real merit -- accessible tune with simple-as-you-like, beautiful fingerpicking that nearly everyone will enjoy and a new player can handle. Definitely is an impress-your-parents-and-friends-and-members-of-the-sex-you-are-aiming-to-attract piece.
