Avril Lavigne's cover of SOAD's Chop Suey is one to avoid - you have been warned.

I always liked Type O Negative's covers. They usually slip one in on each album. They have done Cinnamon Girl, Summer Breeze, and a medly of Beatles tunes, with Daytripper being the central one.
Jose Feliciano does great covers of Beatles tunes
Immature? Of course I'm immature Einstein, I'm 50 and in a Rock and ROll band.
