I like the Paris Texas soundtrack. It's probably my favorite. I also like the theme Schindler's List and I'm quite fond of the theme from Pirates of the Caribbean.

The Heavy Metal soundtrack gets a lot of listening, especially when I'm driving for several hours.

And for something completely different, the soundtrack of "O Brother wherefore art thou" has some cool bluegrass-y stuff, and of course "man of constant sorrow".

I'll second Amelie and any thing by Angelo Badalamenti.

"Collateral" various
"Nosferatu" Popal Vuh
"12 Monkeys" various (the theme led me on a quest to find as much Astor Piazzolla as I could find)

Martin Scorses's "Goodfellas" "Casino" and "The Deaparted". His music always has a great selection of music playing in the background.

"The Messenger" the movie wasn't that great, but the music was wonderful.

"Midnight in the Garden of Good and Evil"

and...

"Oh Brother, Where Art Thou"

Perfect example of a composer who knows where to place his notes. :D

Nino Rota is my favourite composer associated with soundtracks. All Fellini films (?), wrote the theme to The Godfather. The OST from Amarcord is a great starting point.
For pop based soundtracks;
Dazed and Confused; not hip by half but exactly what kids like me listened to at the time.
The Big Lebowski (any Coen bros. movie has great music). Really a knockout.
I have to give a nod to the Pulp Fiction OST even though I've never been able to sit through the movie.
:)

Also, Howard Shore's Lord of the Rings music was great.

Star Wars is an awesome one that I might've forgotten if someone else hadn't mentioned it already. Some of my favs off the top of my head are Kill Bill, Pulp Fiction, Lost Highway, and Natural Born Killers. Fight Club was pretty sweet, too, and really fit the film well.
