Take a listen to Joe Pass...he's crazy good! I really like the albums Virtuoso and Unforgettable.
Django Reinhardt is another acoustic jazz player that is phenomenal.
I'm also a big fan of Leo Kottke. I'm not sure if you would classify his music as jazz, but he's a solo acoustic guitar whiz. Kaki King is another solo acoustic player who would be classified along the same lines as Leo.
Other jazz guitarists (not necessiarly acoustic players) that I really like are Wes Montgomery, Al Di Meola, John Malaughlin, Pat Methany, and John Scofield.

I second the motion of Django Rhienhardt. not only was he hugely influencial in jazz, but also in more mainstream music. Mark Knopfler (Dire Straits) and Hank Marvin have both been hugely influenced by Django, as have Willy Nelson and even B.B. King
I like Pass, Django, Charlie Christian, Wes Montgomery, and Al DiMeola.
