Just a suggestion - have a look at Simon and Garfunkel's back catalogue. There is some lovely finger picking on virtually every song they did.

59th St Bridge Song (feeling groovy)
Leaves that are green
Scarborough Fair (nice lesson by David Hodge on this site!)
Kathy's Song

And loads more!!!

I don't know if you'd classify them as "folk" but some easy finger picking songs are

Blackbird-David has a lesson
Fleetwood Mac-Landslide and Never Going Back Again
Dust in the Wind-Kansas
Can't find my way home-Blind Faith
Wonderful tonight-Clapton
Blood on the rooftops-Genesis
Can't you see-Marshall Tucker Band
Fire and Rain-James Taylor

OK, I don't classify them as easy either..I just wish I could play them all

I am going out on a limb and saying,
there are alot of songs were most people just do simple strums, that you can substitute a pimami picking pattern and makes the song sound just great.
