So we all know harmony... what is Modal Harmony then ?

It's not really a proper label. Any mode will harmonize to exactly the same chords as any other mode... so there's no harmony that's specific to any single mode, or that won't also work with a major or minor scale.

When people talk about "modal harmony" they're generally talking about a chord vamp, or a chord progression without any dominant functioning chords.

The only other thing it could possibly be applied to is 16th century counterpoint, but I've never heard it used in that context :)
