I want to find some scales that give my playing a different "flavor," but I don't know what any of them mean. I'm looking around for different sounds to mess around with. If anybody could discuss some sitar-like scales or flamenco-type scales, that would be cool; mainly I'm just looking for a description of all these strangely-named scales. I would like to keep my guitar in standard tuning, but if there are scales that are best with a certain open tuning, I could just plug them into a chord generator. Thanks for any help!

Nick's list is a good one. But you'll probably discover that many scales go by different names... so when you google them you'll probably end up with some confusing stuff. It might be better to start with one big list, and add to that when (if?) you learn all of them...
Here's a text listing of a bunch. The 1s, 2s, 3s, and 4s are the half steps between each tone - i.e. one fret on the guitar. Since you can do any of them starting with any key note, that's roughly a couple thousand... and it really is free :)
