Thanks guys. I downloaded Audacity and I like it, it works for what I want to do. I also have a friend who has Cool Edit Pro 2.0, so I might be able to use that too.
I emailed Guitar Center about my experience. i just sent it to them saying this is what happened and it made me extremely uncomfortable. I got a reply saying that it's been reported to the store manager and that they will be in touch with me very shortly to "follow up" or something. I've spent a good chunk of change at GC (2 guitars, 2 cases, amp, various pedals and pedalboard and a ton of strings). Maybe in a few years a $500 studio will be something I'd consider, but not now. For now, Audacity is all I need to have myself a little guitarin' fun.
Mackie's Tracktion & Tracktion 2 seems to be really good! And easy to use. You could download a demo of Tracktion at mackie's site before, but now I only found a Tracktion 2 demo. Tracktion 2 is more expensive than Tracktion... Well I would try to find Tracktion if I could.

If you're willing to spend $50, you can take a gigantic leap in recording power: Cubase LE. I'm using it with my studio, and while I think a lot of it is still escaping me, I'm learning daily about the new things I can do with it.
Once I pulled my head out of my rear end and read the manual, I learned to program drums and percussion using some very respectable samples (included!), so I'm jamming over that until I have room to set up real drums again. Very good stuff, very powerful program.
