I'm playing an open C chord with my pinky on the 3rd fret of the high E.

That's simply a C chord

To elaborate further, it has a high G note (5th) instead of the usual high E (3rd). This will make it sound a little different and is often used as a melodic variation. You can also use the pinky to play the D (9th) on the 2nd string 3rd fret for a further melodic variation (Cadd9).

I think this is a chord that shows your finger is coming along nicely! :D

Ha TR well it's something that I do have a bit of a problem with but I can do it, it's now become the yardstick I am measuring my progress.

The reason I was asking for the name is that my instructor called it a "kind of" C6 chord but looking up all the inversions of a C6 that fingering wasn't one of them. I was looking for an easier way to play it while my finger was on the mend.

Looks like I can play pretty much everything (somethings are a bit slow)but I don't think I'll ever get full range of motion back.

It's not any kind of C6 chord - a C6 requires an A note. If you played it with the 5th string open, that would be C6... at least in some contexts; the notes are the same as for an Am7 chord.

A C chord is any combination of notes that includes C, E, G, and nothing else. There are lots of ways (100+) to play a C chord on the guitar, and about as many ways to play a C6.
