Just wondering how much I should expect to pay if I take my acoustic in to get properly "set up". Should I wait until it warms up (i.e. the humidity stabilizes a little bit) to do this?

The cost will depend on a number of factors, starting with how far off "perfect" the current set-up is. Truss rod adjustment, bridge height, intonation, state of the frets will all play a role in the cost.
It will also depend on your luthier. Some think that they are God's gift to guitars and others are just happy to have another "baby" to look after.

I started with nothing - and I've still got most of it left.
Did you know that the word "gullible" is not in any dictionary?

I took one of mine in a year or two ago and had bone nut and saddle made and a setup done for US $75

Here in No Cal I pay about $60 + another $25 for fret dressing if I want.

I prefer ranch!
