get rid of the shim so you have more saddle inserted. The issue you may run into is the saddle will no longer stand straight, or the bridge may crack...

in my limited experiance the bottom of the bridge was always sanded/shaved to lower it evenly. Just to be clear, I'm talking about the wooden bridge ...
