What do you mean "add an extra note?" If you mean throw in an accidental note or something, if it sounds good, do it! If you mean adding in another beat on the rhythm, if you're playing by yourself, go for it! Old blues players often did that. Makes it harder for band members to follow, though.

Yeah, strum, flatpick, fingerpick, whatever floats your boat. This isn't music where you have to follow some rigid formula. But fingerpicking (or hybrid picking) introduces lots more options.

If it sounds awesome, that's what counts!

Ricochet, you mentioned blues players doing that and it being hard for band members to follow; I've read that Lightin' Hopkins was tough to play with. He would add extra beats and skip chord changes.

Most of the old guys who "grew up" playing by themselves were like that, I think. They'd throw in extra beats on a measure, or a whole measure when they felt like it, change chords when they got good and ready...
