That's right 5/4 can only be divided unequally as 2/4+3/4 or 3/4+2/4, but it doesn't have to be divided at all. It can be just 5 beats with only the first one accented.
Not only the odd ones can have unequal groupings. One I like is 3 + 3 + 2. It's sometimes seen as 8/8. That lets you know it's not a standard 4/4 grouping although it doesn't tell you what the actual grouping is, but it's usually evident from the music.
