I know it's not video, but there are a number of good books out with note-by-note transcriptions. I've got "Eagles Greatest Hits 1971-1975," for example, and the transcription of Already Gone has all five guitar parts. That's obviously including the overdubs. It's twenty-five pages long! Not sure you're going to find any video that goes into as much detail as that. It's still in publication and can be gotten from any bookstore or music store either on or off line.
