howzit all,
is a Gdim chord a Gdim7,e.g. the way a G7 is a G(b7), or is it just a G(b5)

You're close - it's a Gm(b5). Diminished chords are triads... but they're often played as dim7s - mostly because that makes them so easy: there are only three of them...
C-Eb-Gb-Bbb(A)
C#-E-G-Bb
D-F-Ab-Cb(B)
the next half step would be to D#-F#-A-C; that's the same tones as Eb-Gb-Bbb-C, so you're starting those three chords over again.
Just about every situation can use the dim7 instead of the dim triad.
