I've been learning to play on my housemates guitar the last few months and its now time I bought one of my own. I don't have much money to spend on one so choice is limited, the guitar that has caught my eye on more than one occasion is the Epiphone LP 100. I notice it has a bolt-on neck? How does this differ from a set-neck is there a great difference (in sound)?

When properly done there is virtually no difference in sound. When not-so-properly done it will result in a lack of sustain. Also, for the same money you can check out the Dean Evo Tevo: http://deanguitars.com/evo_tevo.htm
Weird name, but it is quite like an LP, and has an all-mahony body.
