It's not so much the scales, it's how you use them.

Jazz makes use of a lot of chord substitutions, arpeggios, and chromatic alterations. The most common scales (other than the major and harmonic minor) are probably the Lydian, the Bebop (an eight-note scale that adds the b7 to the major scale), the Dorian, and the Chromatic scale. Others, like the whole tone or diminished scale are also used.

The great paradox of jazz: if you don't know theory, you won't play well. But if you know theory and use it (including thinking about scale names), you won't play well. You have to know your theory - chord spellings, substitutions, etc. - so well that you don't have to think, you just play.
