if a piece of music says 'let ring' what exactly does this mean?
does it mean i keep the note fretted and ringing, regardless of the length of the note?

Yes. For example. if you're playing 'House of the Rising Sun' you'll want all of the notes to keep on ringing for the duration of that chord. However, in music notation it is often written to last until the next note.
