.nothing new, but here goes the question. From the 6th string down to the 1st , i know their EADGBE....but what are they referred to as? Just the EADGBE strings? or what?
Im a bit puzzled on that one.

Nope, you've got it. Distinguish between low E and high e. You can also refer to the four bottom strings as the bass strings and the top two strings as the treble strings.

Yup. That's the cool thing about theory, it actually makes a whole lot of sense most of the time. :D
That E string, A string,... stuff doesn't work so well when you start tuning to Drop D, DADGAD, Open D, Open G... I use the "first string, second string,..." which goes from skinniest to fattest.
