I second Knocking on Heavens door. If you need a strum or chord chart or both just ask.

but with easy open chords you can easily pick up

Tangled up in blue (see David's Lesson on this, its great!)
Mr Tambourine Man
The Times they are a changin'

With a bit of alternate tuning, a nice one (easy chord shapes) is
Shelter from the storm (just three chord shapes abd playing the open strings)

Visions of Johanna I recall is quite easy. Knockin' on Heaven's Door is

G>D>Am7
G>D>C

over and over. Blowin' In the Wind and Mr. Tamb Man are easy, as is Desolation Row. You can also do All Along the Watchtower. It's Am>F>G over and over and if you can't do barre chords you can use the "poor man's" F (using only the 1st four strings).

I for one love doing Dylan songs; it's what made me pick up the guitar almost a year ago.

haha, until you said that I had completely forgot about that song AND it's the first Dylan song I learned. Im so ashamed. :oops:
