There are many scales with more than 7 notes, the 12 note chromatic scale being the most familiar.
8 note scales are called octatonic scales. The most common of those in western music is the diminished scale composed of alternating tone and semitone (whole step and half step) intervals.
The diminished scale is found in classical and jazz
How others are used depends on the musical traditions that feature them. Classical Indian and Arabian music commonly feature scales of more than seven notes, resulting in divisions of the octave into intervals of varying size, some larger than a semitone but smaller than a tone.
