In a theory book i have it says that in every major mode the chords are:
I II III IV V VI VII
M m m M M m diminished
M= Major
m = minor
I assume this is different for minor modes (i.e. the tonic would be minor?)
Does anyone know why this pattern is this way?

Depends on which minor scale.
In natural minor, it's the same as major - just starting from the sixth note:
i iiº III iv v IV VII
In the others - harmonic or melodic minor - the chords change. When you have a sharped 7th, that makes the III augmented, the V major, and the VII diminished.
