Electrical/Power IC Switching Help

This isn't exactly a guitar related question, but I thought I might find some people who know electronics could help me out.

I thought for a project I could buy 4-8 "can lights" with different colored inserts and semi-user control a light show while I played guitar. I have a microcontroller board that has 15-20 pins that I can program to turn on and off (when in the "on position" they give a 5V reading). So what I'm ideally looking for is some type of switching IC that I can enable with a 5V input. It also needs to be able to handle the current sufficient enough to drive a single can light. Any thoughts/directions?

I found this IC (data sheet) online http://www.diodes.com/datasheets/dsAP1212.pdf , but was worried that the 1.25A max current might be too low. There was also a 1ms turn on delay which is a downside considering I want the switching to be as instantaneous as possible.

If you want more information on how I plan on turning them off/on or need anything else just let me know.
