Deep Purple's version of Help is one I like and Ozzy's
In my Life works much better than I though it would.
Jeff Beck covered She's a Woman, but using talk box instead of vocals. Not really a fave of mine, but an interesting version.

Eric Gales did a hellatious job on "I Want You"
George Benson's "Abbey Road" (complete remake of all Abbey Road tunes) was very interesting; some moments of brilliance, but a few moments of horrific schlock as well.
There was a cover of Tomorrow Never Knows on the soundtrack for 'The Craft'. Don't know who did it, but it was great!
Gotta add Rufus Wainwrights version of Accross the Universe to that.
I'd almost forgotten:
Peter Sellers: "A Hard Days Night" and "I Want To Hold Your Hand"
Both brilliant because he did them like mini Shakespearian plays, not as songs, but it worked.

I really enjoy when bands that are so far removed from another do one of their songs. Case in point is a band called Type-O Negative. Every album they put a cover of a classic song on there, done in their very gothic style. One was "Summer Breeze".
They did a "Daytripper" version at one point that was very interesting.
