This involves holding the plectum with only your thumb and index finger to play the lower notes while picking the upper notes with your middle and/or ring fingers
And before you ask, a plectrum is a pick. :)
An alternative to flatpicking is "fingerstyle" or "fingerpicking" where you don't use a pick at all, only your fingers to play the individual strings.
A strum pattern is specific to a song's rhythm and just tells you how to stroke the strings - e.g., the pattern can be something simple like Down - Up - Down - Up, or much more complex.
