when writing music (not in tablature form)how would you write playing the 11th fret on the first string

Yes, Eb. It's the note on the third ledger line above the staff, with the flat added if it's not already in the key signature.

Just a curiosity question noteboat, but how would you show a note on staff paper when your showing the 24th fret on the high e string?

You'd probably want to switch to a different clef if there were a lot of notes up there. The clef you normally use is a treble clef with a little eight under it to signify that all notes sound an octave lower than written. Don't forget the eight. It's often carelessly omitted. A more appropriate clef in that instance would be a treble clef without the 8. That would put that E on the third leger line above the staff. If it's just a few notes which are up that high, then you could mark them 8ve with a bracked over the notes, which means to play those notes an octave higher than written.
