My guitar has dotted inlays, which is fine, but down the road I'd like to have blocks instead. Is it possible to alter this aspect of the guitar without having a new neck or fretboard installed?

yes.

Your local luthier should be able to handle that.

However you may require a partial refret. Guestimate about $10 a fret.
