I don't know or listen to a whole lot of instrumentals (with the one exception of Apocalyptica), but one that I really like is Vampires by Godsmack. It's a really good and quite easy song to play.

I wasn't able to find Frankenstein in my Zappa collection (and I like to think it's fairly complete). Though I kinda wish I did, it would be cool to hear what he did with it.

Usually when I think of Zappa instrumentals, it's Peaches en Regalia or RNDZL.

My longtime favorite Zappa number is Willy the Pimp, which is mostly instrumental.
