I could probably add a few but most of the good ones are already here.

I have to second gnease on "Amos Garrett on Midnight at the Oasis" since I love it and it is such a versatile and flowing piece of music.

Thats one of my recently discovered favorites now.

I recommend highly the Live in Japan album. The duet between Clapton and Harrison on WMGGW is exquisite -- corny word but apt description.

Here are some of my favorite ones, some are somewhat less popular:

"If you have to ask" John Frusciante (Red hot chili peppers) (probably my favorite chili peppers solo, it's got really interesting timing to it and it sounds great)

"You shook me all night long" Angus Young (a pretty simple solo, but it's not what he plays but how he plays it)

"Freebird" Lynard Skynard (enough said)

"Paradise city" Slash (I heard that apparently Slash never learned scales when he was first playing guitar, which amazes me, I find this solo to be just mind-blowing)

"Revelation (mother earth)" Randy Rhodes (probably the most amazing, non-blues based solo i've ever heard)

The Best Solos...
"Since I've Been Loving You" by Led Zeppelin (and darn near impossible to play, I think)
"Killer Queen" by Queen
"Freebird" by Lynyrd Skynyrd
And my favorite, I forget exactly what its called, like "Karn Evil" or something from Emerson, Lake and Palmer (Yeah that's weird)
I was going to say "It's a long way to the Top" but I just remembered its a bagpipe solo :lol:
