Jim croce songs are great for acoustic although not easy for a beginner, don't mess around with jim and leroy brown come to mind

Looks like a s 60's songbook in here. :D I'd put something by Gordon Lightfoot in the mix and some Neil Young.

Pretty much all the country artists can be included in the hall of fame acoustic songs category.

And here its not only the guitar.Its banjo , madolin and fiddle also.

Moreover think of great artists like Jerry Reed , Chet Atkins , Doc Watson , who are really the Certified Guitar Players.

"Bother" by Stone Sour is amazing! It's tuned down, so look up the tuning before you play, but it's an amazing song!

Seu Jorge's covers of Bowie (from the movie "Life Aquatic") are great. He uses a lot of jazz chords and has an awesome sound.

A couple people mentioned Simon & Garfunkel. Scarborough Fair is a song that sounds awesome with some variety in it but isn't too difficult.
